What is Braised Pork Belly Rice?

Braised Pork Belly Rice (爌肉飯) is one of Taiwan’s popular rice and braised dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. A thick slab of pork belly, slow-braised in soy sauce until the fat turns soft and wobbly, laid over a bowl of white rice and drizzled with the braising sauce. Names vary around Taiwan — in the south, a shop sign saying 滷肉飯 may well mean this dish, so look at the photos on the menu or wall to be sure.
